I got the urge to make some cheater homemade pizza after averie’s post. she used a tortilla, and used mango because she was out of pineapple (I know it sounds crazy… but pineapple does too if you’ve never tried it).
I used the tortilla idea, with some red sauce, pineapple, and a little bit of all the cheeses I had leftover — mozzarella, gorgonzola, pecorino romano, and fontina.
but I didn’t play favorites. the next night, I opted for english muffin pizzas. this time it was red sauce, mozzarella, and some leftover mushroom filling from dinner with my parents (spinach, fontina, and breadcrumbs that I forgot were included).
but monday night completely stole the show. I had mangoes this time, so I tried averie’s suggestion (on 1 of 2, just in case it bombed). a little red sauce and a little fresh mozzarella. and I also had naan! I bought them just so I could try cait’s pizza idea. they. were. spectacular.
ingredients:
- two garlic naan
- four-cheese red sauce
- tiny balls of fresh mozzarella
- diced mango
into the oven at 400 F for 20 minutes. really: spectacular.
i love the idea that basically anything can be used to fashion a “homemade pizza crust,” and that making pizza can take 15 minutes flat. i’m thinking at least a once-a-week rotation.

the mango is just stunning on top!! i was sort of taken back about the idea when i read it. but it’s just as good as sweet, juicy pineapple! :-) summer pizza, hello there.
